Chocolate Açaí Truffles

Yield: approximately 30 truffles

Ingredients:

Directions:

  1. Place açaí, dates, cacao, and salt in a food processor.
  2. If the mixture is still too wet to handle, add coconut or oat flour to the food processor and process until a dough forms.
  3. Roll filling into bite-sized balls.
  4. Melt chocolate in the microwave in 10 second increments until fully melted and runny.
  5. Dip filling into chocolate, remove with a tooth pick, and place on a wax paper-lined tray.
  6. Alternatively, place filling balls on wax paper-lined tray and drizzle with chocolate.
  7. Place truffles in the freezer for at least 1 hour and serve.
  8. If not serving that day, keep in freezer for up to 4 weeks.
